Breakfast of Champions

Some of you have asked for more breakfast ideas and this one would definitely give you energy and a good dose of nutrients.

We talked about the importance of having breakfast and even though sometimes this is not possible, we always have options and they can be healthy too.

This breakfast is high in minerals from the almonds and grains, vitamins and good quality fats from the coconut and flax seeds. Don’t forget about the protein; it is important for so many reasons, such as muscle development, tissue repair, hormone health, and a beautiful glowing skin.

Ingredients:

  • 1-2 cups Nut Milk, I used Almond Milk
  • 1/4 cup uncooked Grain of your choice, I used one part quinoa and one part buckwheat
  • 1-2 TSP Cinnamon
  • 1 Scoop Vanilla Whey or Vegetarian Protein Powder
  • 1 Apple
  • 1 TSP Shredded Coconut or 4 thin slices of Fresh Coconut
  • Berries, Fresh or Frozen

Directions:

In a pan bring 3 cups of water to a boil. Place the grains and cook at medium heat for about 10 minutes. Stir and let sit for another 5 minutes. I like to make more than one portion, usually the night before, to use over the course of 2-3 days.

In the morning, take one portion of the cooked grains (if you choose to prepare more than one portions) and place in a food processor or a blender. Add all ingredients except for ½ of the apple, ½ of the coconut and berries. Pulse until creamy or when the desired consistency is reached.
